I was in Nassau, on Paradise Island, having dinner James Bond style in a fantastic (even for a jaded New Yorker raised on some of the best Italian cuisine in the country) restaurant where I encountered my first white lasagna: paper thin layers of pasta layered with (as it turns out) bechamel and Parmesan topped with shaved truffles, baked, then swiftly singed to provide a slight cheesy, truffly crustiness. Coming home, I searched for a recipe, and found it in Scott's book. While I now have a shelf full of highly touted Italian cookbooks, I return to Scott's little tome. He makes it all simple -- from excellent basic info on how to roll pasta by hand, to voluptuous sauces and using leftovers in recipes, to what appear to be complicated lasagnas such as this (though thanks to the kitchenaid pasta attachment I can now easily turn it out for a weeknight dinner). Sadly, I still can't afford truffles but I still say...someday. One lives in hope.

this was the first cookbook I purchased on my own when I was in college. I was completely taken with the fact that you could have what I called macaroni every day in 500 different ways. I wore that copy out years ago. Things have changed in the pasta world and the culinary world since the early 70s, no doubt about that; but It's a testament to the basic tenets of cooking (and particularly cooking of pasta) that this book still exists. You can tell how much it meant to me that I tracked it down and purchased it 40+ years later.

yes, I recommend this book, especially if you're looking for authentic Italian and want to serve unique dishes beyond spaghetti and meatballs.

If you truly want to prepare pasta dishes as they are prepared throughout Italy, please follow these recipes! I was given Jack Denton Scott's book by my mother-in-law at my bridal shower in 1975 and raised my kids on these simple and fantastically delicious recipes. The recipes use simple ingredients like fresh vegetables, herbs and sometimes left-overs from larger meals combined with one of the many pastas that every cook will love. Each recipe can be used as a side dish to compliment a main course or by itself depending on your desire! I've depended on my copy of Jack Denton Scott's Complete Book of Pasta until it fell apart. My new copy is not a luxury - it's a necessity!

I think this book has every pasta recipe you could possibly ever want and the pages on making ravioli are the best I have come across. Greta value and an essential item in every kitchen for pasta fans.
