If you won a $2.00 bet, you'd have enough money to buy one, so the dealer would shout, "Winner, winner chicken dinner ". This is a healthy and extremely flavorful way to dress up boneless skinless chicken breasts. Adding just a small amount of butter on top, and using grated parmesan for a garnish, keeps the fat and calories down.Don't skip the anchovy paste. It may seem like a weird ingredient, but it adds a lot of flavor. Also, don't be alarmed, the lemon juice will appear to cook the chicken a bit, turning it white in the marinating bag.

This Sonoran version of tortilla soup features crushed tortilla chips and melted cheese anchored in a clear broth that is seasoned with garlic, green chiles and Mexican oregano. I use shredded roasted or rotisserie chicken so that it’s ready in about 30 minutes. If you can’t find RO-TEL in your neck of the woods, you can substitute it with 1 cup diced tomatoes and 1/4 cup canned diced green chiles.

There are Southwestern regional influences that vary from New Mexico to Arizona, Texas, and Southern California. Here in Tucson, our regional cuisine is defined by fresh veggies, grilled meats and all of the delicacies that a mid-sized, sunshine filled desert city/college town, 60 miles from Mexico, has to offer. It's summertime eating all year round.For my Tucson style grilled chicken I used sweet Hungarian smoked paprika mixed with hot New Mexico chili pepper, some ground unsweetened chocolate (inspired by molés), and a good California red wine blend. For me, healthy chicken is based on happy chickens. Look for free range, organic chickens who were raised without added hormones.

This Spicy and crunchy Sonoran style chicken salad can be served in lettuce taco wraps, tortas and sandwiches or meal sized salads. I've been trying to come up with a chicken salad recipe that I really like for a long time now. but it wasn't until I shot a photograph for the Food Network Kitchens illustrating a recipe that showcased their basic steps for making chicken salad, that I figured it out. Their recipe called for something oniony, something crunchy (like celery, apple, radish, sweet pickle slices or a combo), mayo and salt and pepper. It was a really good basic guideline for me to start with This recipe is Paleo, low-carb and gluten free.

These Sonoran style sweet and spicy chicken wings are hot! But, the spiciness of these grilled chicken wings will vary greatly, depending on the heat of the chile flakes you are using, and the barbecue sauce you select. This recipe also works well for chicken breasts or thighs. Choose a barbecue sauce that doesn't list high fructose corn syrup as the first ingredient (or preferably at all). I use Sweet Baby Ray's.  I use smoked sea salt in a grinder for my everyday salt. A two pound bag costs about $17.00 and lasts for about a year. I think it makes everything taste better.

The Wedge salad is one of these very classic, simple recipes that's accessible to everyone. One that's been loved for generations and modified along the way to accommodate changing tastes. When I've had this at steakhouses it's usually served with a very thick bleu cheese dressing, but I prefer to leave that to my buffalo wings. This version is topped with a lighter vinaigrette. I've smashed the blue cheese into the vinegar & oil base so that the flavor carries throughout the salad. It can be made into a meal by adding some chopped chicken breast, chopped hard boiled egg or tiny shrimp. The salad feels festive, even if you're just making it for yourself to eat alone in front of the TV. Usually I present it to myself all pretty on the plate, and then I proceed to chop it into bits at the table with my knife and fork.

October 1st: I want to eat warm hearty meals in Autumn colors. Casseroles baked in stoneware dishes with rich sauces. Meat, cream, smoked cheeses, tomato sauce, and, I want the recipe to be fast, and easy, so that I can eat right away. Something that I can make from memory because I've been doing Atkins and I find I instantly become insanely hungry.  This recipe takes about 10 minutes to make if I use store bought sauce and rotisserie chicken. It’s for an individual sized portion, perfect for a quick lunch or dinner. Feel free to double or quadruple or whatever is bigger than that if you have a crowd. Smoked mozzarella, really makes this dish shine, but it’s good with regular mozzarella too.
