A cuisine that’s as old as the earliest civilizations; homemade Indian meal habits can be healthful, delicious and rather addictive.
It’s legendary really; the Parsi love for eggs and its appearance in our daily meals. And here’s how we do it... Take any vegetable like okra, potatoes, gourd , beans or just about anything that catches your fancy (even minced meat works well) and prepare it the Parsi way with aromatics, spices and flavorings. This is called 'the base'. Then top the prepared base with a generous layer of well-beaten seasoned eggs or a whole egg sunny-side up, and cook them covered till they set; sometimes I like to pop the pan into the oven for a golden crust over the eggs.

Melt-in-your-mouth Parsi Kavab or Kebab using ground meat of choice, potatoes and a blend of delicious spices, herbs and aromatics. Serve as an appetizer with chutney or as an entree with lentils and flatbread.
Aloo Paneer, an Indian preparation of potatoes and cottage cheese stir-fried in spices. This makes a great Indian vegetable preparation. One great diversion from norm is to layer aloo paneer over a pizza crust and bake to crispy perfection. Mouthfuls of warm softened Paneer with spiced potatoes will have you hooked to this simple vegetable toss.
