This crispy chicken sandwich is my go-to recipe every time I’m craving a chicken sandwich. The chicken cutlet is slightly spicy, juicy on the inside, and crispy on the outside. the chicken burger is then served with creamy mango sauce, gourmet sesame bun, and red cabbage coleslaw. To make the spicy crispy fried chicken first you need to brine the boneless chicken breast or thighs with hot sauce and spices and let it chill in a fridge overnight. The next morning grab your chicken and dredge it in a dry batter, then dip it in ice-cold water. Repeat the process once more and set aside for 5 minutes then fry the chicken until golden brown. This banana-strawberry chia pudding is perfect if you have an over-ripe banana. Mashed banana makes this chia pudding super creamy and also adds extra sweetness. Banana-Strawberry Chia Pudding Ingredients 1 ripe banana 1 teaspoon honey 1/4 cup chia seeds 1 cup milk Strawberry rose water 1 cup strawberries 1 teaspoon rose water 1 tablespoon honey Cooking direction Hull strawberries then slice or cut them into smaller pieces. Mix strawberries with honey and rose water. Keep in the fridge until ready to use. Mashed banana with honey, then add chia seeds and mix well. Pour milk and mix until well combined. Cover the bowl and store in the fridge overnight, or at least 2 hours. Serve banana chia pudding with strawberry rose water.

Tempe mendoan is a fried battered tempeh that is made from the thin and wide shape of tempeh. Here in Indonesia, you can easily find raw thin tempeh for making tempe mendoan sell in the traditional market, they usually wrapped with banana leaves. The battered tempe then briefly cooked in hot oil until half-cooked. This technique makes the fried tempe still soft and still partially raw on the inside. Tempe Mendoan Ingredients 6 slices tempeh mendoan 1 cup all-purpose flour 1/2 tsp coriander powder 1/3 cup water a pinch of salt and pepper 1/4 cup chopped green onion dipping sauce 1 small shallot, sliced thinly 2 bird’s eye chilies, sliced thinly 2 heaping tablespoons kecap manis 1 teaspoon lime juice Direction Mix all the dipping sauce ingredients in a small bowl, set aside. Grilled tofu was on the menu tonight! I marinated the tofu with garlic paste, ground coriander and lime juice. I was inspired by Ross Dobson recipe from his cookbook Fired Up: Vegetarian. In his recipe, Ross Dobson uses the regular tofu and marinate the tofu with turmeric powder. In Indonesia, you can easily find yellow tofu and it already scented with turmeric. I made a couple of minor tweak in tofu marinate and sambal ingredients. The heat from grill added a nice caramelization touch and served this grilled tofu with raw Balinese sambal for a fresh and spicy taste. This sambal usually serves as a condiment for grilled fish or chicken, but for meatless Monday I made a grilled tofu and paired with this sambal. I love to cook rice with tea because it give an extra flavour to your rice. Suzuki Green Tea Rice Ball Recipe I use short-grain rice to make this green tea rice because that what I have in my pantry, but the texture will be much better if you use Japanese rice or rice for sushi. For the green tea I used Sencha green tea. Because sencha produce a rich, brothy texture, with a balance of delicate sweet flavour, fresh seaweed, and crisp finish.
