The chicken cutlet is slightly spicy, juicy on the inside, and crispy on the outside. the chicken burger is then served with creamy mango sauce, gourmet sesame bun, and red cabbage coleslaw. To make the spicy crispy fried chicken first you need to brine the boneless chicken breast or thighs with hot sauce and spices and let it chill in a fridge overnight. The next morning grab your chicken and dredge it in a dry batter, then dip it in ice-cold water. Repeat the process once more and set aside for 5 minutes then fry the chicken until golden brown. You can easily find bakwan jagung in Indonesia. From a small food stall to a fancy restaurant that serves Indonesian food you can find this crispy Indonesian corn fritters on the menu. There are many versions of this corm fritter, some like to add kaffir lime leaves, but my version use chopped green onion and parsley. Bakwan Jagung (Indonesian Corn Fritters) Ingredients 2 corn cobs 1 medium free-range egg 4 tablespoons all-purpose flour 1 tablespoon rice flour 2 scallions, thinly sliced parsley, thinly sliced 2 red chilies, thinly sliced 1 teaspoon, coriander powder salt and white pepper powder 100g small shrimp oil for frying Direction Cut corn kernels from the stem. Take half of the corn kernels and pulse for a few seconds in the blender until the corn is smooth. Combine the remaining ingredients and mix to form a thick batter. Heat oil in a large pan. Take a spoonful of batter, put some shrimp and drop it gently into the hot oil. Fry until the fritters are golden and crispy.

Potato Omelette Ingredients 2 waxy potatoes, peeled and thinly sliced 4 free-range eggs 1/2 onion, thinly sliced 1/2 tablespoon chopped parsley sea salt and vegetable oil vegetable oil Method Drizzle about 2 tablespoons of oil into a large non-stick frying pan, heat over medium heat. Add potatoes then cover the pan, lower the heat and cook for 20 minutes, stirring occasionally. Add onion, cook for another 5 minutes or until the potato and onion are cooked through. Crack the eggs into a mixing bowl, season with a pinch of sea salt and black pepper. Whisk with a fork. Add cooked potato and onion to the egg mixture. Transfer the mixture back to the frying pan and cook over low heat. Put the lid back and cook for around 20 minutes until set and the base is golden. Carefully flip the omelette over the pan, then cook for another 5 minutes or until cooked through. Once cooked, transfer to a plate and serve warm with salad.

Banana-Strawberry Chia Pudding Ingredients 1 ripe banana 1 teaspoon honey 1/4 cup chia seeds 1 cup milk Strawberry rose water 1 cup strawberries 1 teaspoon rose water 1 tablespoon honey Cooking direction Hull strawberries then slice or cut them into smaller pieces. Mix strawberries with honey and rose water. Keep in the fridge until ready to use. Mashed banana with honey, then add chia seeds and mix well. Pour milk and mix until well combined. Cover the bowl and store in the fridge overnight, or at least 2 hours. Serve banana chia pudding with strawberry rose water.
Tempe penyet or smashed tempeh is one of my favorite vegetarian dishes. It is so delicious, affordable, and easy to make. Tempe Penyet with Sambal and Basil Ingredients 1 block tempeh, sliced 3 cloves garlic, grated sea salt & freshly ground pepper 200 ml water Oil for frying sambal 3 cloves garlic 5 red chilies 3 bird’s eye chilies Salt and sugar to taste a handful of fresh basil 1-2 tbsp coconut oil Juice of 1/2 lime Direction: Mix garlic paste, salt, pepper, and water in a shallow bowl. Add tempeh slices and marinate for about 15-30 minutes. Set aside. Meanwhile, pound the garlic, chilies, salt, and sugar in a mortar and pestle. They don’t need to be super fine, you just want to bring out the flavors from garlic and chilies. Add half of the basil to the sambal. Then carefully pour the hot oil onto the sambal. Mix everything well. Drain and pat dry the tempeh. Heat about 2 tablespoons of oil in a nonstick pan or cast iron pan. Shallow fry tempeh until browned on both sides. Put fried tempeh with sambal and gently smash the tempeh. Add more basil and drizzle with lime juice before serving.

Every village and family has its own version.
