This crispy chicken sandwich is my go-to recipe every time I’m craving a chicken sandwich. The chicken cutlet is slightly spicy, juicy on the inside, and crispy on the outside. the chicken burger is then served with creamy mango sauce, gourmet sesame bun, and red cabbage coleslaw. To make the spicy crispy fried chicken first you need to brine the boneless chicken breast or thighs with hot sauce and spices and let it chill in a fridge overnight. The next morning grab your chicken and dredge it in a dry batter, then dip it in ice-cold water. Repeat the process once more and set aside for 5 minutes then fry the chicken until golden brown. This banana-strawberry chia pudding is perfect if you have an over-ripe banana. Mashed banana makes this chia pudding super creamy and also adds extra sweetness. Banana-Strawberry Chia Pudding Ingredients 1 ripe banana 1 teaspoon honey 1/4 cup chia seeds 1 cup milk Strawberry rose water 1 cup strawberries 1 teaspoon rose water 1 tablespoon honey Cooking direction Hull strawberries then slice or cut them into smaller pieces. Mix strawberries with honey and rose water. Keep in the fridge until ready to use. Mashed banana with honey, then add chia seeds and mix well. Pour milk and mix until well combined. Cover the bowl and store in the fridge overnight, or at least 2 hours. Serve banana chia pudding with strawberry rose water.

During Ramadan, the evening breakfast has become the most precious time of the day. And the fast-breaking meal wouldn’t be complete without traditional dessert. This kue lapis or steamed layer cake is one of my childhood favorites. Kue Lapis (Steamed Layer Cake) 450 coconut milk 350 ml of boiling water 260 gr cane sugar 300 gr all-purpose flour 30 gr rice flour a pinch of salt 1/2 tsp pandan paste Mix coconut milk and sugar, give it a good stir. Pour in the boiling water and stir until sugar dissolves. Add both flours and a pinch of salt, stir until you get the smooth batter. Strain the batter and divide it into 2 equal portions in separate bowls. Add pandan paste into one portion batter and keep the other portion white. Fill up the bottom of the steamer with water and bring it to boil. Wrap the lid with a kitchen towel to prevent condensation drips back to kue lapis. I paired my burger patties with nigella seeds burger buns, sauteed radicchio with pomegranate molasses, and topped with crispy onion. Dukkah Chickpea Burger Ingredients Dukkah chickpea burger 150g dry chickpeas 1 eschalot or small red onion, diced 2 carrots, peeled and shredded 2 tbsp tahini small bunch of mint leaves, chopped 1/2 tsp ground coriander 1/4 cup dukkah Sauteed radicchio 2 heads radicchio, torn and roughly chopped 1 tbsp olive oil 2 tbsp pomegranate molasses For serving Burger buns melted cheese dukkah Direction Wash and rinse the chickpeas. Using plain yogurt makes this panna cotta lighter in texture This simple dish is elegant, rich and so perfect for entertaining. I used Yoforia Authentique yogurt drink here, but you could use thicker yogurt, such as Greek yogurt. Yogurt can be tricky to work with. If you add it too early you could kill the good bacteria and probiotics in yogurt.
