Old West style Vegetarian chili made with plant-based beef, and black beans. Served with vegan shredded cheddar cheese and sour cream. The Old West style beef and bean chili that I make here in Arizona is more-similar-than-not to what I grew up cooking in Ohio. These days, I know a lot more about the chiles and spices I use as ingredients, and the recipe I make now is almost entirely plant-based.
I topped this baked cheese crisp (which is a popular dish called Frico in Italy) with pizza spices and toppings before sliding it into the oven. The results: crustless pizza! This dish is a fast & easy, low-carb, high protein way to enjoy pizza night anytime, and it travels well too. Recently, I took a batch on a flight. When I unwrapped my precious bag of “yellow gold” I’d stashed in my carry-on bag, my fellow passengers sniffed the air like dogs and stared at me jealously as the unmistakable aroma of baked cheese filled the cabin. I used a cookie sheet covered with a Silpat so that the cheese slid right off. You can also cover your cookie sheet with parchment or foil.
Bring a little sunshine into your life with these homemade, bright and happy two-ingredient baked Parmesan cheese and pepperoni crisps.
This Sonoran version of tortilla soup features crushed tortilla chips and melted cheese anchored in a clear broth that is seasoned with garlic, green chiles and Mexican oregano. I use shredded roasted or rotisserie chicken so that it’s ready in about 30 minutes. If you can’t find RO-TEL in your neck of the woods, you can substitute it with 1 cup diced tomatoes and 1/4 cup canned diced green chiles.
Molletes beat avocado toast any day! These open-faced breakfast sandwiches are made by slathering refried beans onto toasted bolillo rolls and then heaping avocado slices, a fried egg, hot sauce, and lots of cheese on top. If you can't find bolillos at your local bakery, use a sweet French roll instead.
Sweet bell peppers stuffed with creamy nacho cheese, avocado, pickled jalapeños, black beans and crunchy tortilla chips. This fun vegetarian recipe is an outtake from my cookbook, Taste of Tucson.
A quick and easy Tucson Sonoran breakfast taco with a crispy egg fried in chorizo then folded with cheese into a tortilla. I ate this as a makeshift breakfast every day for weeks while writing the Taste of Tucson cookbook. The fat from the tablespoon of chorizo makes the egg really crispy and adds a lot of flavor without too many extra calories. I fry up a batch of chorizo in advance and store it in the fridge, where it becomes solid, until I scoop it out, and heat it up.
To help us carbo-load for the long trek through the neighborhood, my mother would prepare her standard pre-trick-or-treat meal of Kraft's boxed spaghetti dinner. We loved it. This recipe is almost as easy to throw together before going out. It's also quite a bit spookier looking, yet elegant enough to serve at a Halloween themed adult dinner party. Try challenging kids who think "weird "mushrooms and black pasta are too creepy to eat to a fun Halloween dinner game where they have to try it anyway. I'm betting that this spooky Carbonara, (or "Bacon and Egg & Cheese Pasta" as I like to refer to it), is sure to be a hit. For the black pasta I used Asian Organic Black Bean Spaghetti, which I found at my local market. It is considerably less expensive than the traditional black squid ink pasta, plus it's gluten free, with only 17 carbs per serving, making it a nice counter-balance to all of the sugar you'll probably be eating later on.
Beer, cheddar cheese, and pretzels — what more could you want? How about that it's only got two ingredients and you can make it in ten minutes or less?
Here's a crunchy and slightly sweet sprinkles cream cheese recipe that is especially delicious on blueberry bagels. Fact: Everyone needs more rainbow sprinkles in their lives. I should know, I'm the author of Sprinkles! Recipes and Ideas for Rainbowlicious Desserts.
Not only is this warm, hearty dip vegetarian, it’s also low-carb and gluten free, so you can serve it at a party and not worry about everyone’s dietary needs too much, unless of course they don’t eat cheese, because this recipe is loaded with it. (Yay for cheese.) Serve with fresh zucchini, carrot and celery slices, pasta chips and/or crostini.
Some people believe that grilled cheese must be made on the stovetop or over an open flame, but my secret to a perfectly melty grilled cheese sandwich is toasting it in the oven instead of over a burner.
A cross between a Mexican pizza an an open-faced quesadilla, Southern Arizona restaurants started selling cheese crisps more than 50 years ago and it's become a staple of our local Sonoran style cuisine.I ditched the tortilla and came up with this super-cheesy, updated version of the dish that is grain-free, and thus gluten-free and low-carb as well. Parmesan is a hard cheese that crisps when melted, replacing the flour based tortilla. The cheese crisp is the perfect comfort food, and this one is the cheesiest! Here is my all-cheese version topped with green chiles, cilantro and a chipotle ranch drizzle. Serve the chipotle ranch on the side as a dipping sauce if you don't have a squeeze bottle available. I used a blend of jack, cheddar, and queso quesadilla for the Mexican cheese blend.
Here's an elegant, yet quick and easy baked breakfast casserole. Tuck savory Canadian bacon, eggs, herbs and cheese inside crusty baguettes the night before. When you wake up, add a little cream, then slip it into the oven for brunch. This recipe originally appeared on Tastecooking.com
Mini sweet peppers filled with jalapeno cream cheese and topped with panko bread crumbs for an easy appetizer.
Tacos for breakfast? Of course! Pinto beans add a healthy dose of fiber and low-carb tortillas erase any remaining guilt factor. Make these as mild or spicy as you like with your favorite taco sauce or salsa. Pretty tortilla cups filled with eggs, bacon, pinto beans, cheese and salsa.
Cincinnati chili cheese nachos, "Cincinnachos" as they will henceforth be known. The best of everything for snacking season. Start with My Recipe for Cincinnati Style Turkey Chili, substituting ground grass-fed beef or vegetarian ground beef crumbles if you prefer.
There is no flour in these breakfast muffin cups, yet they're still light and fluffy! The secret is to beat the egg whites with an electric mixer until stiff peaks form. I mixed in spicy Italian chicken sausage and cheddar cheese, but feel free to experiment with your favorite sausage and cheese combinations. This recipe was originally published on TodayFood.com.
This snack is best eaten very late at night, preferably after attending a party of some other festive gathering. It's easily assembled and pleasant to look at, even when blurry.
Celebrate spring with these easy, grilled pizzas topped with lemon flavored Mascarpone cheese, fresh tomatoes, pepperoni and oregano flowers
