I know, this is more of a holiday/weekend breakfast when you have actual time to make it but also to enjoy it! But you can absolutely prep the batter the day before and just cook your pancakes in the morning.
Have you ever heard of kefir? Don’t run please. It is basically fermented milk. It gives cakes, pancakes and all sorts of sweet treats a wonderful fluffiness. It tastes like yogurt but is much runnier.

Banana bread muffins with chia seeds, why? Well, chia seeds are pretty, very aesthetic and add a little crunch. But that is not why I did that : they are full of antioxydants and a good plant protein source too.
Baked egg custard is a dessert I absolutely love! Super easy to make and a sweet childhood memory of mine. I add a dash of vanilla because it is so good like that… If you like really sweet egg custard, feel free to put more sugar in there.

What is your favorite comfort drink for winter? I always had a thing for a good hot chocolate! I made a dairy version but make it dairy free by adding almond milk and omit the sour cream. This hot chocolate is creamy and thick, so comforting and not too sweet.
Afternoon snacks are not only for kids in the household! Mama’s working hard and need some fuel comes 4pm. A big cup of tea and a little snack. It is so easy to grab store bought granola bars or cookies from a drawer but I always try to do a homemade treat.
Why on Earth would you put butternut squash in a cake? I mean we already put carrots, beets and sometimes zucchinis so I figured why not? This picture doesn’t do it justice AT ALL. It is really moist and delicious.
