Late May Bank Holiday Monday is the perfect day for barbecues and nothing fits a barbecue better than a delicious veggie burger.

It’s definitely comfort food time of year; it seems dark most of the time and a bit of warming traditional food is the perfect way to keep the spirits up.

This is an adaptation of the Misfit Baker’s wonderful snicker doodle loaf recipe (if you haven’t yet, do check out her blog, she bakes the most wonderful vegan goodies).

Salted caramel is one of my very favourite things so when I was approached to create a bespoke recipe using a vegan salted caramel sauce from Bad Brownie company I jumped at the chance.
