This is a late summer risotto with summer squash and fresh mozzarella.
Finish cooking the pasta in the skillet adds flavor to the pasta and thickens the sauce.
I used yellow squash but green or striped (zucchini) would work the same.
One zucchini / summer squash about 7″ (17cm) long is just the right size for a vegetable side dish for the 2 of us.
