It's easy to make your own pesto, but even easier to buy a good quality pesto in the market.

I usually bake salmon in the winter; mon mari cooks it on the grill in summer.

An updated version of traditional Macaroni Salad, loaded with ham & peas, of course, but also celery, carrots and peppers.

Red Beets (Beetroot) and Red Onions make a great winter salad to add color and flavor to your table.

I cook for 2 but this could be stretched to feed 3 with a salad, light soup or some fresh bread.

I prefer to make this with cherry or grape tomatoes (from my garden) but any, fresh, vine-ripened tomato will work.
