The other day, I had lots of strawberries lying in my refrigerator. Bought the extra by mistake and was wondering what to do about them. I know they don't last too long even in the refrigerator. So thought of making this quick and easy strawberry jam . It requires just 2 ingredients, Strawberries and sugar . That's all. This jam is prepared without pectin. Only thing is that, you have to be constantly near it . You have to make sure that it doesn't stick to the bottom. Preferably use non stick pot to prepare it.
This recipe is very easy , though requires some patience as you have to constantly be near the stove to keep an eye so that the jam doesn't stick at the bottom of the wok(vessel). Though most of the jam requires pectin(soluble gelatinous carbohydrate found in ripe fruits etc.& used for setting jams & jellies) I have not used it in my recipe, still it turned out to be delicious.
