Baked Brioche Egg Cups

Baked Brioche Egg Cups

This delicious baked brioche egg cups recipe is a perfect option for breakfast on the go. Sometimes on busy weekday mornings, getting everybody ready in time is a real challenge! Knowing that if time escapes us I can give my daughters one of these as they run out of the door just takes away some of the stress. These breakfast egg cups are super easy to make (and to takeaway), and make for a satisfying, wholesome breakfast. Mix it up if you like, adding pancetta, different types of greens, herbs or spinach, for example. Whatever suits you and your family! Packed with protein, similar to my omelette muffins, I just love an easy breakfast solution that is filling, substantial, yet easy to eat on the go, too. Knowing that their breakfast on-the-go (and mine!) can contain a couple of veggies and energy-packed eggs makes me feel I’ve given them a good, healthy start to their day.

Vegetable Platter with Avocado Sauce - Dreamy Table

Vegetable Platter with Avocado Sauce - Dreamy Table

Got creative today with a vegan-friendly vegetable platter full of local & seasonal vegetables. I served my vegetables with delicious and creamy avocado sauce. My creamy avocado sauce includes avocados, plain yogurt, extra virgin olive oil, cilantro (or other herbs), lime juice, salt, and pepper. It’s similar in flavor to guacamole but creamier and lighter.  You can store this avocado sauce for up to 3 days in the fridge. Fanouropita Vegan Spiced Cake

Fanouropita Vegan Spiced Cake

Fanouropita is a spiced Lenten cake made in the name of Saint Fanourios, Patron Saint of Lost Things. Want to get a new job? Need to find your runaway cat? Saint Fanourios is the martyr you need to pray to! This cake has moved from religious practice to a regular bake in our house, and it is the perfect, healthier option to go with your mid-morning cup of coffee… Fanouropita is a great vegan cake recipe too, as it lacks eggs and butter. Made to be blessed at church on August 27th in Saint Fanourios’ name, this recipe usually contains seven or nine ingredients (numbers holy in the Greek Orthodox Church and in broader Christianity); but the actual ingredients included vary across Greece. Saint Fanourios’ icon, and therefore his sainthood, was rediscovered on Rhodes, where I am from - so this is a Rhodes version of Fanouropita. Check out our blog on Saint Fanourios to read more about the Fanouropita tradition!

Gluten Free Carrot Cake with Maple Cream Cheese Frosting (Grain Free, Sugar Free)

You can leave your mixing bowls in the cupboard for this healthy, gluten free carrot cake! The batter gets whizzed up right in the Vitamix or food processor, and the result is seriously amazing. It’s an ultra moist cake, and nobody will know it’s naturally sweetened. The cake is taken over-the-top with this Maple Cream Cheese Frosting. Be sure to take the cream cheese out of the fridge before making the cake, as it needs to soften before making the frosting. Check out the notes for a dairy-free option! If you prefer to make cupcakes, divide the batter between 12 lined muffin cups, and bake for 30 minutes.

Spider Web On Cup Cakes

Spider Web On Cup Cakes

Since it is Halloween fever, I was looking for ideas to spike it up and have prepared 2 types of simple and easy cakes today. One is cupcakes and the other one is the normal cake in round cake pans. The base cake is the same for both except for the bigger cake I have used whipped cream with orange juice as frosting , and a chocolate spider web to give it a Halloween theme, while for cup cakes , I have used only melted chocolate to make the spider webs. Of course you get ready made halloween decorations for the cakes but I like to prepare everything from the scratch. Here I will show you how to prepare these spooky little cupies.

Beetroot Cup Cakes With Oreo Frosting

Beetroot Cup Cakes With Oreo Frosting

My kid is a big cup cakes fan and always wants to buy them whenever we visit walmart or any other grocery stores. And I always find some excuses and make him get distracted. I too love cup cakes but looking at the food color they put there, oh! I just don't feel like going for them. I always try to avoid artificial food colors and look out for natural food colouring , wherever possible. The other day, I wanted to make few red colored cup cakes and didn't wanted to make use of artificial color. I did some research on how to make food coloring and learnt how to make natural colors at home. Henceforth will implement those whenever I make cookies or cakes. If you are planning to make red color, then go for Beet Puree , instead of Beet juice, because raw puree works best instead of juice. You can also make red velvet cake or red velvet cupcakes with beets and throw away artificial red color. So, Using above technique, I prepared around 18 Cup cakes using beet root puree prepared out of 1 medium sized beet, mixed in my regular cup cake ingredients and believe me, they turned out to be super moist and fluffy. I also prepared oreo cookies butter cream frosting for my cupcakes , because Oreos are another favorites in my family. But only make sure that you make fine powder of your cookies while mixing in the frosting, othewise, the pieces will get stuck to the piping nozzle and you won't be able to frost properly. Actually I wanted to prepare oreo cupcakes, but later changed my mind so thought of preparing oreo frosting and Beet Root Cup cakes.
