Skillet Lasagna with Mushrooms & Spinach (Gluten-Free)

This lightened-up skillet lasagna, brimming with mushrooms and spinach, forgoes béchamel sauce for an easy broth base and is finished with fontina and fresh ricotta. Rather than getting stacked in a casserole dish, the whole thing is made from start to finish right in a skillet, in under an hour! While the recipe isn’t hard, there are a lot of time-sensitive steps. I suggest getting the shallots, garlic and thyme chopped, as well as the wine and broth ready to go before beginning (this will help keep you sane). Once the lasagna is simmering away, you can shred the cheese (and tackle some dishes, if you’re really motivated). The lasagna can be made several hours or even a day in advance. In fact, I prefer it after it’s had a chance to rest for a spell. It reheats wonderfully, making it perfect for entertaining or for potlucks.

1. Partially cook the penne pasta, about 2 minutes shy of the box directions.2. In a dutch oven heat oil over medium-high heat. Break up sausage into about 1 inch pieces and brown well.3. 1. In a dutch oven or large saucepan cook the onions and sausage over medium heat, breaking up the sausage into small pieces, until sausage is browned.2. Stir in the minced garlic until fragrant, about 3o seconds.3. Turn heat to low and stir in the tomato sauce, oregano, parsley, 1 tsp of basil, salt and 1/2 tsp pepper. Cover pan and simmer for about 30 minutes, stirring occasionally.4. Cook the lasagna noodles and set aside.5. In a large bowl mix the ricotta, egg, Asiago cheese, remaining 1 tsp basil and remaining 1/2 tsp pepper.6. Preheat oven to 375° F. 7. In a 9x13 baking pan add a little sauce, just enough to cover the bottom of the pan. - Cover with 4 lasagna noodles overlapping them.- Spread all the ricotta mixture evenly on top of the noodles. - Sprinkle 1/3 of the mozzarella cheese over the ricotta mixture. - Add 4 more noodles on top of the mozzarella. - Spread half the meat sauce on the noodles. - Sprinkle half of the remaining mozzarella on top of the meat sauce. - Place the remaining 4 noodles on the mozzarella. - Spread the remaining meat sauce on the noodles and sprinkle on the remaining mozzarella.8. Cover the pan with aluminum foil and bake for 45 minutes to 1 hour or until bubbly.

Italian Sausage with Herb Polenta and Kale

1. Place the sausage in a sauce pot and cover with 4 cups of water. Bring to a boil and cook over medium-high heat 10-15 minutes or until they reach an internal temperature of 155 degrees F. Remove the sausages with tongs and reserve the cooking liquid.2. Pour the cooking liquid into a measuring cup. Discard all but 3 cups. Pour the 3 cups of liquid back into the sauce pot. Add the base or bouillon, milk, herbs, salt and pepper and bring to a boil, whisk in the polenta. Reduce heat to low and simmer for 15-20 minutes while you prepare everything else. STIR OFTEN3. In the meantime, heat a non stick skillet over medium heat and add the oil. Place the sausages in the pan and brown on all sides, about 2-3 minutes per side. Remove the sausages with tongs and put in a warm place (I set mine in the microwave).4. In the same skillet, still over medium heat carefully add the garlic and cook until just beginning to brown on the edges. Add the kale, salt and red pepper flakes. Toss to combine then add the water and cover. Cook about 2-3 minutes. Remove lid and simmer just long enough for the water to evaporate.5. Heat Chunky tomato sauce to 165 degrees. 6. Take polenta off the heat and stir in the cheese.7. Serve in separate dishes or arrange artfully on plates.
