Crunchy Seed Crackers (Gluten Free, Vegan)

Crunchy Seed Crackers (Gluten Free, Vegan)

Adapted from French Appetizers (Gibbs Smith 2019), by Marie Asselin. These crunchy seed crackers come from my friend and fellow blogger, Marie Asselin. Her book is devoted to the art of French entertaining, filled with both classic and contemporary appetizers and nibbles. These crunchy yet tender seed crackers are one of my favorites. Olive oil, sea salt and herbs de Provence give the crackers a lovely flavor (herbs de Provence is found in the spice aisle of most grocery stores, but if you can’t find it you could use an Italian seasonings mix or your favorite dried herb blend). The crackers are delicious with dips, such as my Creamy Pea Dip, or any soft cheeses. I especially like to serve them with marinated feta, which I make by dousing a block of feta with good quality olive oil and a smattering of fresh herbs. To make the crackers gluten-free, I use brown rice flour as Marie suggests (you can use all-purpose flour in its place).

Homemade Labneh Balls Recipe - Dreamy Table

Homemade Labneh Balls Recipe - Dreamy Table

Homemade labneh balls preserve in extra-virgin olive oil with herbs and chili flakes. I first discovered labneh A few years ago, during my trip to UAE. They serve this creamy strained yogurt in cubes dusted with za’atar, nuts, and dried chili flakes, and drizzled with olive oil. Before then, I hadn’t heard of labneh. Yogurt cheese sounds unfamiliar and odd to me, but when I finally try it for myself, labneh really caught my attention. They look like the jewel in my eyes. Their creamy texture combined with fragrant spices and rich oil is so luscious. Back then is really hard to find labneh in Jakarta, luckily they’re so easy to make. It is made by strained full-fat plain yogurt through cheesecloth until it becomes thick and spreadable. The longer you strain, the thicker the labneh becomes. Strain the yogurt for 24-48 hours ff you want to use labneh as a dip or to spread on toast, strain it longer if you want to make labneh balls If you make this Homemade Labneh Balls, be sure to leave a comment and tag me on Instagram! Crustless Frico Parmesan Peperoni Pizza

Crustless Frico Parmesan Peperoni Pizza

I topped this baked cheese crisp  (which is a popular dish called Frico in Italy) with pizza spices and toppings before sliding it into the oven. The results: crustless pizza! This dish is a fast & easy, low-carb, high protein way to enjoy pizza night anytime, and it travels well too. Recently, I took a batch on a flight. When I unwrapped my precious bag of “yellow gold” I’d stashed in my carry-on bag, my fellow passengers sniffed the air like dogs and stared at me jealously as the unmistakable aroma of baked cheese filled the cabin. I used a cookie sheet covered with a Silpat so that the cheese slid right off. You can also cover your cookie sheet with parchment or foil.
