If you’re not gluten-free you can make this same recipe using regular all-purpose flour. To melt chocolate or cheese in stuffed crepes, fold or roll the crepes over your filling, then bake the crepes in a 350-375˚F oven for 5-10 minutes. I prefer whole milk in this recipe, which creates a tender yet sturdy texture (low-fat milk results in a more fragile texture that tends to tear easier), but you can use a dairy-free milk instead. Finally, you can use either 1 or 2 tablespoons of sugar to taste. The sugar is key for flavor and browning (even if you’re making savory crepes). Be sure to read all of the tips below!

This is my VERY FAVORITE chocolate cake to make and eat, and you would never know that it doesn’t contain a speck of flour and that it’s made entirely in the Vitamix or food processor (meaning no mixing bowls)! The cake is made with cooked quinoa, which provides a wonderfully moist texture, but you can’t taste it AT ALL. Take note that you'll need to cook the quinoa before starting the cake (check out the notes below). Raw (unprocessed) cacao powder lends an unparalleled deep chocolate flavor—if you can’t find it use the best quality cocoa powder you can find. The light and creamy chocolate whipped cream frosting also gets made in the Vitamix (or you can use hand beaters). The frosting is also fabulous on cupcakes, crepes and hot chocolate. This double layer cake is on the smaller side, but it easily feeds 8-10 people (you can also make cupcakes - see the Notes below!). It’s the ultimate birthday, holiday or special occasion dessert!

This crepe cake with chocolate whipped cream is a STUNNING dessert that looks seriously impressive but is way easier to make than you might think! With layers of tender crepes, a chocolate whipped cream filling, and a topping of whipped cream, berries and melted chocolate, it’s a show-stopping dessert for any occasion. You’ll need to make a batch of these blender crepes before beginning the cake. The crepes can be made days or even months ahead, making easy work of assembling the cake. Take note that you’ll need 2 1/2 cups total of heavy cream (2 cups for the chocolate whipped cream and 1/2 cup for the whipped cream topping). Also, the cake needs to be refrigerated for at least 2 hours (or frozen for 30 minutes) before you add the toppings.
