Curly Celery Salad with Blue Cheese & Toasted Pecans

Curly Celery Salad with Blue Cheese & Toasted Pecans

There is something so great about the fresh taste of celery and usually, it is relegated to being a small ingredient in a larger dish, like an ingredient in soup or salad or even as a minor character in spicy chicken wings. It never dawned on me to make it the focal point of a dinner salad until my good friend Mouna served it to us one night! From that point on, we were hooked, and we’ve enhanced the salad by adding blue cheese and toasted pecans and also incorporating some of the celery leaves, which are not only beautiful but add a flavor all of their own! They are slightly more bitter, but so fresh tasting and they make the salad a bit more complex in nature. This salad is so easy, and all you really need is a good potato peeler or a mandoline slicer if you have one, and your favorite vinaigrette. One of our favorites for this dish is our super light and Zesty White Balsamic (Dijon) Vinaigrette, but any bottled or your favorite homemade dressing will work great. So many options! If you have a dressing you love, please send it our way and we’ll give it a try!

Grilled Chicken Paillard with Arugula, Fennel & Potato Salad

Grilled Chicken Paillard with Arugula, Fennel & Potato Salad

This grilled chicken paillard is light and refreshing, but incredibly dynamic. Warm grilled chicken is topped with a salad of crunchy shaved fennel, peppery arugula and tender baby potatoes. Sliced almonds give the salad crunch, golden raisins provide sweetness, and a flurry of feta adds just the right amount of saltiness. I love the subtle anise flavor of tarragon in this dish, but you can swap it out for other herbs (either a single herb or a mix), such as dill, basil, parsley and/or mint. Be sure to check out the other ingredient swaps below. To get a jumpstart on the recipe, pound out the chicken breasts the day before (refrigerate them until you’re ready to use).

Veggie Burger Patties

Veggie Burger Patties

Why buy veggie burgers, with great lists of unknown ingredients, when making your own is so simple? That’s what I think anyway, since I tapped into this particular recipe. For me, an easy veggie burger has to provide a challenge to its meaty alternative, but I don’t want it to mimic beef, I want it to be different. This meatless burger will convert a few meat eaters at your barbecue - not because it ‘tastes like meat’ but because it’s a really tasty alternative, full of flavour. This is not just for barbecues, however. We end up having vegetarian patties as a midweek meal pretty often, because it’s not complicated and veggie burger patties always seem to go down well with the whole family. Because I use a combination of couscous and chickpeas instead of something like potato to bind the burger, the burger already contains a great amount of protein from the legumes, as well as carbs (and texture) from the couscous. Add to that the peas, corn, carrot and spring onion, and you basically have all the nutrition you need! For a light dinner, serve them up alone with a side salad or some fresh veg, or for something heartier add your burger to your favourite bread roll…we’ve even been known to accompany them with our oven-baked potatoes or oven-roasted chips!

Curried Sweet Potato Soup Bowls with Frizzled Greens, Apples & Peanuts (Vegan)

Curried Sweet Potato Soup Bowls with Frizzled Greens, Apples & Peanuts (Vegan)

This silky and thick vegan sweet potato and apple soup gets topped with rice, garlicky frizzled kale, chopped roasted nuts and tart green apple. The soup is delicious on its own, but made even better by the toppings. The recipe calls for cooked rice or quinoa, which you’ll want to start at same time as the soup, so that it’s ready for you (it’s also a great way to use up leftovers). Look for a light vegetable broth (or you can use chicken broth if you're not vegetarian), as dark broths can overpower the other flavors (you can also use all water!).
