Cream Puffs {Strawberry Whipped Cream & Lemon Curd | Vanilla Pastry Cream}

These are classic French cream puffs filled with your choice of smooth and creamy filling.  Cream puffs are made from a choux dough (pronounced 'shoe'), formally called pâte à choux.   With the choux dough, you can make cream puffs or eclairs and the fillings are traditionally simple whipped cream or pastry cream.  For this recipe, I have enhanced the whipped cream with strawberries and added some lemon curd as a filling option.  Enjoy!

Poached Egg on Puff Pastry Shell with Leek & Albufera Sauce - Dreamy Table

Poached Egg on Puff Pastry Shell with Leek & Albufera Sauce - Dreamy Table

Making this dish requires a lot of preparation. You have to make your puff pastry shells, cook the mushrooms and leeks,  poached the eggs perfectly to your desire, and the most crucial thing is making a smooth and silky Albufera sauce. The hardest part is you need to prepare all at about the same time.  I make my puff pastry from scratch, keep it in a fridge overnight and roll it over the next day to make the pastry shells. You might think I’m crazy, but I called it dedication. Nothing is easy in this world, you want good food you must work hard to get it. Beside that I can channel my anger and energy by rolling the pastry dough again and again, at the end of the day I can sleep soundly and dream about delicious breakfast. Poached Egg on Puff Pastry  4 medium-size puff pastry shells Poached eggs 2 litres water 200 ml white vinegar 4 fresh eggs Albufera sauce 500 ml white chicken stock 100 ml cream 500 gr chicken carcass, chopped small 1 shallot, finely chopped 50 gr mushroom trimming, finely sliced 2 sprigs thyme 1-2 tablespoon unsalted butter 100 gr white wine 30 g beurre manie salt …

The puff pastry on top is such a simple idea but so magical, it’s an effortless way to dress up the corn soup. The flaky puff pastry becomes a blanket for the creamy and flavorful corn soup. Pâte à Choux (choux pastry) may sound all fancy but it is really relatively simple to make compare to cupcakes or muffins. Whether you are making cream puffs or eclairs, it is basically the same formula, except the piping shape. f When I came across this churro cream puffs recipe by Barbara Bakes, I knew I had to make it. Puff Pastry Ice-Cream Sandwiches

Puff Pastry Ice-Cream Sandwiches

These puff pastry ice cream sandwiches are truly the superior ice cream sandwich dessert that require only 3 ingredients. Buttery, crispy & flaky layers of puff-pastry are truly meant to be made into a frozen sandwich treat! They freeze so well but don't become solid, so you can easily bite into them before the ice cream melts! In this version, I went for the classic vanilla bean ice cream rolled in chocolate sprinkles or shavings.

Spinach Tart

Spinach Tart

I like to make a good old spinach pie, a Spanakopita, but this mixes up that old favourite into something new. The perfect picnic piece, this tart is savoury and moreish, lightening the flavour of cooked spinach with lemon and herbs, and setting it inside a buttery, flaky pastry case. Something like a British quiche, I love the combination of eggy, cheesey spinach-rich filling with the shortcrust pastry edge. I use aromatic dill and zesty lemon to bring a real feeling of summer sun to the recipe, and the addition of feta, ricotta and cream cheese, alongside pine nuts, just ensures a rich, nutty and satisfying mouthful. It’s perfect for lunch in the garden, with a simple side salad, and also works perfectly as a slightly special picnic or packed lunch.
