Happy Sunday, and happy Superbowl Sunday! Today I thought I’d share my typical Sunday links post along with some of my favorite recipes for Superbowl Sunday in case you’re looking for some quick inspiration. Firstly, some links to my family’s favorite recipes for Superbowl Sunday. 1. Starting off with the savory options, these Quick & Easy Vegan “Egg” Rolls are always a crowd pleaser. 2. These Healthier option Tex-Mex potato skins are vegan and so easy, plus they’re a great way to use those extra potato skins with no waste. 3. Oh, and another recipe that’s perfect because it’s Superbowl Sunday! These Mini Cheese Pizza Bagel Swirl Bites are bomb! 4. Also, these Southwest Egg Rolls are an all time classic! 5. I can’t forget to mention this Mozzarella Stuffed Pesto Pizza Monkey Bread. I’d have to say they’re probably the boy’s absolute favorite thing that I make. 5. Lastly for the savory category, and going with the mozzarella again, are these Best Ever Mozzarella Sticks. Super simple but so good. 6. Now for the sweet, I’m actually making these brownies tonight because that’s how amazing they are. I’ve tried so many brownie recipes over the years but these are MY FAVORITE BROWINES SO FAR. Eh hem, just saying. 7. Need something quicker and easier? I call these Last Minute Crack Snacks for a reason. They only need 3 ingredients each and they’re super easy. Fool-proof easy. 8. The title might be a mouthful but these Double Peanut Butter Stuffed Pretzel Chocolate Chip Cookies are insane. 9. There really aren’t words for these Brown Butter Caramel Snickers Cookie Bars. 10. And finally these Reese’s Chocolate Peanut Butter Explosion Cookie Bars can change lives. I haven’t decided yet but I might make them tonight also. I hope you all have a great evening!

This spanakopita inspired spinach tart is easy to make and has an incredible flavor from a few secret ingredients. Dried currants (or you can use coarsely chopped raisins) and cinnamon provide a touch of sweetness and warmth, complementing the savory flavors. Serve the galette as a main course, appetizer OR brunch. You’ll need to make a batch of this Easy Pie Crust Dough (which can be made gluten free!) before beginning the tart. The dough can be made days or weeks in advance. You'll only need a half batch of the dough but it's best to make the whole recipe and freeze the other half for another galette down the line or for a sweet galette (see the Notes below). These easy-to-make steak burrito bowls are one of my favorite dinners, and I hope you’ll love them too! Spice-rubbed skirt steak gets served with a tangle of caramelized peppers, onions and sweet corn, with a creamy avocado sauce to tie everything together. The recipe was inspired by the Chicken Burrito Bowls in my book, Build-a-Bowl. I swap out the chicken for skirt steak and amp up the flavor with a smoky-sweet spice rub (the steak is worth making in its own right, even if you don’t make the bowls). I also incorporate a mix of fajita-inspired veggies (which get cooked in the same pan as the steak!). The avocado crema sauce is like the love child between guacamole and sour cream and is also amazing on tacos. I love to serve all of the components over grains for a one-bowl dinner, but they’re also delicious tucked into tortillas. Feel free to swap out the skirt steak for boneless, skinless chicken thighs.

Serve the sauce over fish (it’s awesome on this slow cooker salmon), on grain or veggie bowls, over tacos, with chicken and lamb, as a salad dressing, or as a dip for sweet potato fries. I prefer to use Greek yogurt with a 2% fat content or higher, as non-fat yogurt is rather chalky (however, it’s a personal preference!). This Spicy and crunchy Sonoran style chicken salad can be served in lettuce taco wraps, tortas and sandwiches or meal sized salads. I've been trying to come up with a chicken salad recipe that I really like for a long time now. but it wasn't until I shot a photograph for the Food Network Kitchens illustrating a recipe that showcased their basic steps for making chicken salad, that I figured it out. Their recipe called for something oniony, something crunchy (like celery, apple, radish, sweet pickle slices or a combo), mayo and salt and pepper. It was a really good basic guideline for me to start with This recipe is Paleo, low-carb and gluten free.
