Fluffy Lemon Pancakes + Sweet Cashew Butter

Fluffy Lemon Pancakes + Sweet Cashew Butter

So I was thinking, it’s been a while since the last time I shared a pancake recipe, hasn’t it? Honestly, it’s a little hard to keep track sometimes when I share so many recipes, but I can’t imagine it ever being a bad time for them, so I think pancakes are on the menu today! Some of my family like the thinner pancakes but most of them like the thickest fluffiest kind and I personally think those are the best texture. The hint of lemon is just the thing to make these some seriously memorable pancakes and then, of course, I had to make some sweet cashew butter for good measure to put on top. Alright, and one last thing I wanted to say about these pancakes is that they’re a little bit on the sweet side. You see, in my family it’s sometimes a thing to eat them plain as if you’re snacking on a cookie or something. Because of that, I feel like a hint of sweetness makes them perfect. On the other hand, if you’re the type of person that likes to have fairly plain pancakes so they’re just right to douse in maple syrup or chocolate sauce, then feel free to cut the sugar in the recipe in half. I sincerely hope you love these as much as our gang did!

Coctel De Camaron: Sonoran Style Mexican Style Shrimp Cocktail

Coctel De Camaron: Sonoran Style Mexican Style Shrimp Cocktail

The shrimp cocktail I grew up with in Ohio was reserved for special occasions. It was served in a chilled martini glass filled with crushed ice topped with a dollop of horseradish and lemon juice infused ketchup, the shrimp dangling around the rim. I loved it. Sonoran style shrimp cocktail (cocktail de camaron) is a more casual affair, but just as festive. It's traditionally served layered in the kind of glass used for ice cream sundaes, along with the customary long spoon, and since I make mine with Bloody Mary mix and hot sauce it's ready in about 5 minutes. This recipe is from my cookbook, Taste of Tucson.

Spinach Tart

Spinach Tart

I like to make a good old spinach pie, a Spanakopita, but this mixes up that old favourite into something new. The perfect picnic piece, this tart is savoury and moreish, lightening the flavour of cooked spinach with lemon and herbs, and setting it inside a buttery, flaky pastry case. Something like a British quiche, I love the combination of eggy, cheesey spinach-rich filling with the shortcrust pastry edge. I use aromatic dill and zesty lemon to bring a real feeling of summer sun to the recipe, and the addition of feta, ricotta and cream cheese, alongside pine nuts, just ensures a rich, nutty and satisfying mouthful. It’s perfect for lunch in the garden, with a simple side salad, and also works perfectly as a slightly special picnic or packed lunch.

Indian Gajar Halwa: Carrot Pudding

Indian Gajar Halwa: Carrot Pudding

Nothing says comfort like a ‘gajar’ or carrot halwa, an Indian dessert made with grated carrots cooked in sweetened cardamom-flavored milk, and generally served with a dollop of whipped cream or vanilla ice-cream…my version is also accompanied by a warm drizzle of honey and lemon.

Lemon Cake

Lemon Cake

I LOVE this lemon cake recipe (and by how quickly it seems to disappear, so does everybody else)! It is flavoursome and mouthwateringly zesty. It’s also nice and moist, due to the addition of the lemony syrup after cooking. I think dry cakes are a total letdown and are something to be avoided wherever physically possible! Either keep it simple straight from the oven - resulting in something akin to a lemon-infused Madeira loaf - or make the simple lemon icing I suggest and drizzle this over once the cake is cool, transforming the bake into a more traditional lemon drizzle cake. I must say, I like it both ways, but the sweet tang of the lemony icing is something I can rarely resist!
