Firstly, some links to my family’s favorite recipes for Superbowl Sunday. 1. Starting off with the savory options, these Quick & Easy Vegan “Egg” Rolls are always a crowd pleaser. 2. These Healthier option Tex-Mex potato skins are vegan and so easy, plus they’re a great way to use those extra potato skins with no waste. 3. Oh, and another recipe that’s perfect because it’s Superbowl Sunday! These Mini Cheese Pizza Bagel Swirl Bites are bomb! 4. Also, these Southwest Egg Rolls are an all time classic! 5. I can’t forget to mention this Mozzarella Stuffed Pesto Pizza Monkey Bread. I’d have to say they’re probably the boy’s absolute favorite thing that I make. 5. Lastly for the savory category, and going with the mozzarella again, are these Best Ever Mozzarella Sticks. Super simple but so good. 6. Now for the sweet, I’m actually making these brownies tonight because that’s how amazing they are. I’ve tried so many brownie recipes over the years but these are MY FAVORITE BROWINES SO FAR. Quick and easy chicken cheesesteaks made with chicken breasts, onions, peppers, and Monterey Jack cheese.
A vegetarian version of a cheesesteak using portobello mushrooms, onions, peppers, and provolone cheese.
For the dough:1. In a stand mixer or large bowl mix the yeast, honey and water. Let stand 10 minutes or until it begins foaming.2. Add the 1 TBSP oil, salt and flour and mix until well combined and dough pulls away from sides of bowl.3. Use a little oil to lightly cover sides and bottom of a separate large bowl.4. Knead the dough 10 minutes by hand or about 5 minutes using a stand mixer with a dough hook.5. Form the dough in a ball and place in the oiled bowl. Cover and put in a warm place to rise, about 30 minutes.6. Roll out dough to a 16 inch diameter circle and place on a lightly oiled pizza pan.For the toppings and pizza assembly:1. Preheat the oven to 450°F.2. Cook the bacon pieces in a large pan until crispy, Set bacon on a paper towel and set aside. Discard all bacon fat except 1/2 tsp from the pan and add the spinach to the pan over medium heat. Cook for 3 minutes, stir in the garlic and cook for 15 more seconds or until fragrant. Turn off the heat and allow spinach to cool. When spinach is cool mix in the cheeses. 3. Brush the top of the pizza dough with the olive oil then spread on the spinach & cheese mixture evenly. Top with the chopped artichokes and cooked bacon.4. Bake for 14 to 15 minutes or until crust is golden brown.
