To make the spicy crispy fried chicken first you need to brine the boneless chicken breast or thighs with hot sauce and spices and let it chill in a fridge overnight. Gluten Free Veggie Burgers with Sriracha Mayo

This streamlined veggie burger recipe comes together quickly with minimal steps.  The burgers are stuffed with sweet potatoes, beets and chickpeas, and are flavored with garlic, cumin and coriander.  They’re bound with chickpea flour (or rice flour) and an egg, making them gluten free and grain free. For a vegan version you can omit the egg—the patties won’t be as sturdy and will be more of a knife and fork situation (but will still taste delicious). I serve the burgers with a quick and creamy sriracha mayo (recipe below), which is also awesome on sandwiches and fries. In fact, my favorite way to serve the burgers is with roasted sweet potato fries with extra sauce for dipping! If you’re sensitive to garlic you can omit it from the recipe.

1. Combine flour, salt sour cream, egg and water in a mixer bowl. Mix with dough hook until dough comes together. If dough is dry, add more water 1 tablespoon at a time, until it's moist and springy. If the dough is sticky, add more flour, 1 tablespoon at a time, until it's smooth.2. On a floured work surface, knead dough for 3 or 4 minutes until elastic. Separate dough into 4 balls. Cover dough with plastic wrap and refrigerate for at least 30 minutes.3. In the meantime work on the filling: Boil potatoes with 1/2 tsp salt for 15 minutes or until just tender. Drain for 2 minutes.4. In a separate pan cook the butter and onion and over low heat with a dash of salt until well browned. About 10 minutes.5.Put the well drained potatoes into the pot they were cooked in and add the buttery onions, a dash of salt and white pepper. Mash with a potato masher. Add the sour cream and whip together.6. Taste and season if needed add a slash of milk or cream if too dry. Cover and store in the fridge until later use.7. Roll dough to an 1/8 inch thickness and cut with a biscuit cutter. Repeat with the 3 remaining balls of dough. Mash together all the scraps and roll out. You will have about 45-50 dough rounds. Cover with a lightly damp towel.8. Working 5 at a time, brush each round with eggwash. Then fill with about 1 TBSP of filling. Press each closed to make a half moon shape. Repeat with all the dough rounds.9. Bring a large pot of salted water to a boil. Boil 5 pierogies at a time. Drop in water and wait until they float. Lift out with a slotted spoon and let drain on paper towels.10. Once they have dried a bit it's time to fry them. In a non-stick skillet melt the bacon fat or butter and brown the pierogies. Season with salt & pepper.11. Serve with sour cream, sauteed onions, chopped green onions or your favorite pork item (like bacon, smoked sausage or pork belly etc)

Add flour, salt and oil and mix with a dough hook about 5 minutes, until well combined and dough clears sides of the bowl. 3. Place dough in a bowl and cover with plastic wrap. Place in the refridgerator for at least 4 hours. 4. Pull dough out of fridge and let rest at room temperature about 10 minutes.For Toppings: 1. Heat diced bacon in a saute pan over medium heat until crispy. Place bacon on paper towel line plate and set aside. 2. Drain all but 1 TBSP fat from pan and add ground pork, garlic, basil, oregano, red wine vinegar and cayenne. Mix well and cook over medium heat until pork is cooked through, about 6 to 7 minutes. 3. Place pork mixture on a paper towel lined plate and set aside.For Pizza: 1. Preheat oven to 475 degrees F. 2. Cut a piece of parchment paper the size of the bottom of a baking sheet and roll out dough very thin on paper with a rolling pin until the paper is covered. 3. Cut excess dough off sides of paper and place on a baking sheet. 4. Spread tomato sauce evenly on dough. Sprinkle cheese on sauce evenly then pork mixture, ham, bacon, and finally jalapenos. 5. Bake in oven for about 15 minutes.

My mother-in-law used to make turkey schnitzel for special family dinners and we all loved it. In those days, she always used turkey cutlets, but lately, I’ve had some difficulty finding them at my market. If you have a nice, accommodating butcher, they can make cutlets for you from turkey breast, or you can do it yourself, or chicken tenders are a great substitute, which we do when we can’t find the turkey. In either case, you will pound the meat between layers of plastic wrap until it’s about 1/4 –inch thick, dredge it in egg, and roll wrap it in crumbs of one sort or another. Sometimes, we add Dijon mustard to the egg wash to give it a different flavor and sometimes we mix the crumbs with finely grated Parmesan cheese. It’s always fun to add a new twist to your favorite schnitzel recipes.

1. In a large bowl mix together the egg, onion powder, garlic powder, 2 TBSP BBQ sauce, crackers and salt. Add the ground beef and mix until well combined.2. Roll ground beef mixture into 6 balls(about 3oz each). Flatten balls into 4 inch patties, cover and refrigerate for 1 hour.3. Place bacon on a griddle and heat to 350°. Cook bacon to desired crispiness and set aside.4. Cook the burger patties in the bacon fat on the griddle, about 4 minutes per side. While burgers cook heat your rolls and slice in half to accommodate the burgers.5. Place cheese on each burger then top with bacon. Remove burgers from griddle and place on the bottom half of each roll.6. Place 1 TBSP BBQ sauce on top of each burger and top with the remaining half of each roll.7. Serve and enjoy.
