Curried Sweet Potato Soup Bowls with Frizzled Greens, Apples & Peanuts (Vegan)

This silky and thick vegan sweet potato and apple soup gets topped with rice, garlicky frizzled kale, chopped roasted nuts and tart green apple. The soup is delicious on its own, but made even better by the toppings. The recipe calls for cooked rice or quinoa, which you’ll want to start at same time as the soup, so that it’s ready for you (it’s also a great way to use up leftovers). Look for a light vegetable broth (or you can use chicken broth if you're not vegetarian), as dark broths can overpower the other flavors (you can also use all water!).

No-Bake Vegan Chocolate Pudding Tart (Gluten Free, Naturally Sweetened)

This easy, no-bake vegan chocolate tart has a rich and creamy chocolate pudding center and a press-in date and pecan crust. The tart is topped with coconut maple whipped cream for a STUNNING but easy dessert. You’ll need to make a batch of this Easy Dark Chocolate Pudding for the tart. Be sure to use full-fat coconut milk in the pudding, and use 4 tablespoons of coconut sugar for the best flavor. You’ll need 3 cans total of coconut milk for the whole recipe—one for the whipped cream topping and two for the pudding (you will have leftover—save it for soups, curries or this No-Churn Mango Ice Cream!). Refrigerate the can of coconut milk for the topping overnight. You can make this tart in a 14-inch rectangular tart pan, in a 9-inch round tart pan, or in individual serving cups—see the Tips below! Take note that the tart needs to be refrigerated overnight then again for 30 minutes after you add the whipped cream topping.

Cauliflower Gratin with Crispy Bacon

1. Separate the cauliflower into stems and medium to small florets.Finely chop the stems until you have 1 1/2 cups and set aside. Discard any leftover stems.2. Bring a large pot of water to a boil. Add the florets and 1 tsp salt to the boiling water. Cook about 5 to 6 minutes, rinse, drain and set aside.3. Preheat oven to 400° F.4. In a pan over medium heat melt the butter and add in the shallots and stems and cook about 4 minutes, stirring occasionally. Stir in the garlic and cook 30 more seconds.5. Stir in the wine, stock and heavy cream and cook for 10 to 15 minutes or until liquid is reduced by half. 6. Spread the cauliflower florets over the bottom of a 9x13 baking dish.7. Puree the liquid mixture from the pan in a blender until smooth and pour over the florets. Season with salt and pepper and stir.8. Top with the grated cheese and bake in the preheated oven for 30 minutes. Sprinkle the crispy bacon on top and bake an additional 5 minutes.
