Chickpea, sweet potato and apple salad with miso dressing and mixed nuts
This versatile sauce is creamy and bright, with a touch of heat from jalapeño and brightness from lime and cilantro. A smidge of honey balances all the flavors. Serve the sauce over fish (it’s awesome on this slow cooker salmon), on grain or veggie bowls, over tacos, with chicken and lamb, as a salad dressing, or as a dip for sweet potato fries. I prefer to use Greek yogurt with a 2% fat content or higher, as non-fat yogurt is rather chalky (however, it’s a personal preference!). If you don’t have a large food processor, you can make the sauce in a mini food processor or a Vitamix.

In this healthy chicken paillard recipe, pounded chicken breasts are topped with a buttery fingerling potato salad featuring fresh greens, kalamata olives and creamy goat cheese. It’s the ULTIMATE combination of flavors and textures! Dandelion greens work wonderfully in this recipe, but you can swap them out for arugula or spinach if you prefer (if using spinach or arugula, toss them with the potatoes right before serving to prevent the leaves from wilting). Be sure to mix the potatoes with the onion and vinegar while the potatoes are hot—the warm potatoes will absorb the vinegar, giving them more flavor, and they will soften the onion. Finally, if you prefer, you can grill the chicken breasts instead of cooking them in a skillet—brush the chicken with oil before grilling to prevent sticking. This rich, savory and nutritious soup is the perfect dish to curl up with on a chilly night. Think of it less as a recipe, and more as a technique. You can swap out the leek for a sweet onion, and/or change up the herbs and spices to make it your own (think ginger and curry powder, chile powder and cumin, etc). It only needs to simmer for about 10 minutes, making it perfect for weeknights. While I love this soup for its simplicity, you can certainly dress it up by swirling a bit of heavy cream or coconut cream into each bowl. Using half broth and half water gives the soup a clean flavor, although you can also make it entirely with water! If you opt for a vegetable broth, use a lighter style broth (I find that many store-bought vegetable broths are quite rich and overpowering, so I usually stick with water if I’m making a vegetarian version). This soup is a lovely first course or satisfying main course, especially when paired with these oven grilled cheeses!

This luscious and creamy sweet potato souffle is the perfect special occasion side dish or vegetarian main course. With a luscious, creamy center and a melted cheese topping, it’s one of my all time favorite holiday side dishes, and it’s also a fabulous vegetarian anytime dinner when paired with a salad (it’s one of my husband’s favorite weeknight dinners). Best of all, it’s really easy to prepare, and it can be made in advance!! The soufflé gets whipped up right in the food processor using boiled sweet potatoes, nutty Comté cheese (you could go for a mild Gruyere instead), eggs, half-and-half, cinnamon, nutmeg and a hint of brown sugar. It has an irresistible sweet-and-savory flavor. You can use a classic round soufflé dish or any 2-quart baking dish.
