This clean-out-the-fridge green sauce is the perfect way to use up leftover herbs! The recipe is more of a technique than an exact formula. You can use any leafy green herbs, such as parsley, cilantro, basil and/or mint (use just one or a mix!). Feel free to also throw in a few teaspoons of stronger herbs, such as rosemary, thyme, tarragon and/or chives. Garlic first gets blitzed in the food processor, then the herbs are added along with toasted nuts or seeds for body, and acid (in the form of lemon juice, lime juice or vinegar) for brightness. Don't skimp on the nuts, as they're essential for flavor and texture. Olive oil turns the ingredients into a lovely, spoonable sauce. For a lighter version, add a tablespoon or two of water before drizzling in the oil. Be sure to season the sauce well with salt and pepper, and aim for a good balance between the acid and the oil. The sauce is delicious as-is, but definitely check out the variations in the notes below! Spoon green sauce over meats or fish, toss it with pasta, slather it on sandwiches or drizzle it over roasted veggies or grain bowls. If you only have 1/2 cup of herbs or less, you can adapt the recipe using a mini food processor. *Check out my video above to see my herb storage tips!

Her book is devoted to the art of French entertaining, filled with both classic and contemporary appetizers and nibbles. These crunchy yet tender seed crackers are one of my favorites. Olive oil, sea salt and herbs de Provence give the crackers a lovely flavor (herbs de Provence is found in the spice aisle of most grocery stores, but if you can’t find it you could use an Italian seasonings mix or your favorite dried herb blend). The crackers are delicious with dips, such as my Creamy Pea Dip, or any soft cheeses. I especially like to serve them with marinated feta, which I make by dousing a block of feta with good quality olive oil and a smattering of fresh herbs. To make the crackers gluten-free, I use brown rice flour as Marie suggests (you can use all-purpose flour in its place).

This gluten-free apple crisp is as welcome on a weeknight as it is at a dinner party! Whole and ground oats are used in place of white flour, and are combined with pecans, maple sugar and spices for a tantalizing topping that would be delicious draped over nearly anything (think berries in the spring, peaches in the summer…). It also has nearly half the sugar and butter of regular crisp recipes, but I promise you won’t miss them! A hint of cardamom and vanilla paste lend aromatic sweet warmth, but are optional. For a vegan version of the crisp, swap out the butter for coconut oil and serve the crisp with a dairy-free coconut ice cream. You can either bake the crisp in an 8x8-inch (or similar-sized) baking dish, or in smaller individual baking dishes. While the crisp takes slightly longer than an hour to make because of the baking time, the prep process is really easy!

Add broth, turn up heat and bring to a boil then reduce heat to low and simmer for 10 minutes.7. Stir in the pasta and turn heat to medium, cook until pasta absorbs most of the liquid.8. Turn off the heat and stir in the butter, add salt and pepper if needed.9. Serve topped with fresh grated Parmesan cheese.
