We got some fabulous news about my husband's job recently. He got a pretty big promotion and we wanted to have a little impromptu celebration. It's easy to lay out a fancy-looking spread if you keep a few staples in your house (you can raid your pantry for the rest.) I was able to uncork some sparkling wine and throw together Fruit & Brie Crostini on the quick and I've got some tips to help you get ready for any special occasion in a snap!

This easy fig and walnut chutney is fragrant with port, cinnamon, star anise, orange zest and maple syrup. It smells just like the holidays, and it’s the perfect addition to cheese platters or cheese plates. For an easy crostini, spoon the chutney over fresh ricotta or brie on toasted baguette slices. It’s also excellent with roasted turkey or pork (as well as on turkey and pork burgers!), and it makes a killer sandwich with cheese (think gruyere, Comté, brie or Taleggio) and arugula. You’ll need cheesecloth and butcher’s twine to bundle the whole spices but if you don’t have one you could use a tea steeper or just add the spices and fish them out at the end.

If you’re in need of a super easy but impressive appetizer (or dinner!), these customizable, crowd-pleasing, creamy whipped ricotta crostini are a lifesaver! You’ll want to use good quality fresh whole milk ricotta, which should taste creamy and sweet (avoid brands that have stabilizers and gums in the ingredient list). You can top the crostini with any number of seasonal ingredients. Some of my favorite combinations include: roasted delicata squash with a drizzle of maple syrup and a sprinkle of sea salt; pomegranate molasses with pomegranate seeds and toasted walnuts; roasted mushrooms with baby arugula, shaved Parmesan and a drizzle of truffle oil; and honey (regular or truffle) with a sprinkle of sea salt.

1. Preheat oven to 375°F. Cut baguette into 1/4 inch slices(about 25 pieces, you'll have leftover bread).2. Lay the baguette slices on a baking sheet and brush both sides of the bread slices with the oil. Sprinkle on table salt and ground black pepper.3. Bake bread slices for about 8 minutes in the preheated oven. Flip over and let cool on the baking sheet.4. Put the cream cheese, thyme, kosher salt and white pepper in a bowl and mix with a mixer until fluffy.5. Add the shredded chicken and mix for another 30 seconds or until well combined.6. Top each bread slice with about 1 TBSP of the chicken mix then 3 grape halves cut side down.7. Serve immediately, makes about 25 crostinis.
