Mexican Street Corn Salad with Creamy Ancho Dressing

Mexican Street Corn Salad with Creamy Ancho Dressing

This easy salad is a spectacular showcase for summer corn. It's sweet, salty, smoky, crunchy and creamy, and it tastes like a lightened-up version of Mexican street corn! You'll need cooked corn kernels for this recipe, which you can either steam, boil or grill (it's a great way to use up leftover corn!). If the corn is really fresh you can even use it raw. If you can’t find ancho chile powder, you can use a standard chili powder blend. Serve the salad as a side dish, or turn it into a main course by topping it with grilled shrimp or chicken. Sometimes I add avocado as well.

Oregano-Lemon Tilapia with Corn and Avocado Salad - Dreamy Table

Oregano-Lemon Tilapia with Corn and Avocado Salad - Dreamy Table

It’s very simple to put this oregano-lemon tilapia and charred corn salad together. You only need to make one sauce to spooned over the grilled tilapia and corn salad. Fresh oregano adds compelling taste to the sauce and it makes the simple grilled fish tastier. I seared my tilapia in a skillet with fresh oregano to intensify the flavor. To prevent the oregano to burn I add it right before I flip the tilapia, but you could just skip this step if you not in the mood for the extra effort. Honey Glazed Easy Chicken Wings(Baked) Recipe - Pooja's Cookery

Honey Glazed Easy Chicken Wings(Baked) Recipe - Pooja's Cookery

Whenever you want some quick appetizers, go for Chicken wings. But the problem is, most of the chicken wings are deep fried and if you are health conscious, then obviously it is not an option. So go for baked or grilled ones. They taste equally delicious and very easy to cook and also you can eat how many you want without any guilt. Also, if you are more health conscious, try to remove skin from the wings or use boneless skinless chicken pieces instead of wings for this recipe. These wings are great especially , if you have a large crowd, prepare your marinade in advance. You can even prepare it 3-4 days in advance, refrigerate and then just warm it up whenever required. But let me warn you !! Make extras, because , I am pretty sure, the moment you take them out of the oven, they will disappear. My own personnel experience. For marinade, you can also use ginger if you like the taste of it,but I skipped it. You can also go for Teriyaki Chicken Wings or Lemon Pepper chicken Wings if you like. But I personally like my wings to be hot with some sweetness too. So I used hot sauce , along with honey. So let's have a look at my step by step recipe of how to cook Chicken Wings.

Sonoran Style Grilled Chicken

Sonoran Style Grilled Chicken

There are Southwestern regional influences that vary from New Mexico to Arizona, Texas, and Southern California. Here in Tucson, our regional cuisine is defined by fresh veggies, grilled meats and all of the delicacies that a mid-sized, sunshine filled desert city/college town, 60 miles from Mexico, has to offer. It's summertime eating all year round. For my Tucson style grilled chicken I used sweet Hungarian smoked paprika mixed with hot New Mexico chili pepper, some ground unsweetened chocolate (inspired by molés), and a good California red wine blend. For me, healthy chicken is based on happy chickens. Look for free range, organic chickens who were raised without added hormones.
