These mozzarella and chorizo peppers are great quick and easy snacks to make with that bag of mozzarella cheese that you have in the fridge, and work well to ease those afternoon hunger pangs - what’s better for a meat eater than a mozzarella chorizo snack, after all? They’re pretty healthy too, so they’re a snack I’m happy to dole out to my daughters when they’re hungry after school. Because there’s the bell pepper and the tomato sauce it means they’re getting two portions of veg, and I often serve them up with an accompanying side salad for a light lunch or dinner, too - the pizza-like taste of the peppers means everyone’s happy to nibble up some accompanying greens without complaint! For a veggie version, I do mozzarella peppers for myself - still scrumptious. If you’re avoiding the chorizo, like me, or just fancy playing with the recipe, why not add a shake of paprika to the mozzarella for smokiness, or simply add a couple of basil leaves for that Mediterranean summertime taste?

1. Toss the tomatoes and sugar together and let sit.2. Preheat oven to 425 degrees. Slice the baguette into 1/4 inch slices, getting 30 pieces. (Freezing the bread for just 1/2 hour will help you get a clean cut)3. Place a cooking rack over a baking sheet and arrange the slices of bread on top in a single layer spacing a 1/2 inch apart.4. Brush with oil and sprinkle with salt and pepper.5. Bake in the oven until crisp and dried. About 8 minutes,turn and 4 minutes more. Allow to cool on the sheet.6. In the meantime heat the oil in a 12 inch nonstick skillet over high until smoking hot. Add the garlic and toss once add the tomatoes and toss together. Sprinkle with salt and pepper. Cook for 1 minute 30 seconds stirring often. Turn off the heat.7. Assemble your apps: Place a piece of basil leaf on top of each crostini off to the left side. Then add a piece of mozzarella in the center. Spoon a tsp of the tomato mixture off to the right side on top the crostini. You should have three distinct colors on top of each bread.

Creamy Pea Dip (a healthy and delicious appetizer or snack!)

This easy and healthy pea dip tastes of warm weather and sunshine, no matter the season. The base for the dip comes from defrosted frozen peas. Frozen peas have already been blanched, so there’s no need to cook them. I simply leave the bag on the counter for a few hours, or dunk the bag in warm water to defrost them quickly (you can also pop the bag in the fridge overnight). Goat cheese gives the dip a gentle richness without overpowering the sweetness from the peas. A mix of fresh leafy herbs flavors the dip. I love tarragon and mint (those are the two “happiest” herbs, in my opinion!), but basil is also delicious. The dip is fabulous with veggies or garlic crostini (see the notes below), or as a spread on toasted bread.
