There is something so great about the fresh taste of celery and usually, it is relegated to being a small ingredient in a larger dish, like an ingredient in soup or salad or even as a minor character in spicy chicken wings. It never dawned on me to make it the focal point of a dinner salad until my good friend Mouna served it to us one night! From that point on, we were hooked, and we’ve enhanced the salad by adding blue cheese and toasted pecans and also incorporating some of the celery leaves, which are not only beautiful but add a flavor all of their own! They are slightly more bitter, but so fresh tasting and they make the salad a bit more complex in nature. This salad is so easy, and all you really need is a good potato peeler or a mandoline slicer if you have one, and your favorite vinaigrette. One of our favorites for this dish is our super light and Zesty White Balsamic (Dijon) Vinaigrette, but any bottled or your favorite homemade dressing will work great. So many options! If you have a dressing you love, please send it our way and we’ll give it a try!
I feel under the weather today. I make this smoked gindara salad with balsamic vinaigrette because I found mixed green salad, cherry tomatoes, smoked gindara and day-old white bread sitting nicely in my fridge. This salad with smoked gindara, balsamic vinaigrette and garlic croutons is easy, simple and light. Smoked Gindara Salad with Balsamic Vinaigrette If you don’t have smoked gindara you can replace it with smoked salmon or just skip it. I like to add crushed roasted garlic for my salad dressing because it adds more flavour, but if you don’t have roasted garlic just skip it and use only olive oil & balsamic vinegar for the dressing. Ingredients 3 cups mixed salad green 10 cherry tomatoes 200 gr smoked salmon, very thinly sliced Balsamic vinaigrette 1 clove roasted garlic 4 tbsp olive oil 2 tbsp balsamic vinegar Salt and pepper Garlic croutons 1/2 loaf day-old bread 2 tablespoon olive oil 2 cloves garlic, crushed Salt Instruction Garlic croutons: Cut the bread into small cubes. Heat olive oil in a large skillet over medium-high heat. Add garlic and cook for about 1 minute, until garlic sizzle and fragrant. Add the bread cubes and cook for about 2 minutes until golden and …
Hi, guys! I was actually making this Antipasto Salad for the fam this week and wondered why I'd never shared it before; It's a delicious, filling, salad-for-dinner option that can be literally thrown together in minutes and everyone loves it. It's a Romaine base topped with all of your favorites from the Antipasto tray: pepperoni, fresh mozzarella, grape tomatoes, artichoke hearts, kalamata olives, and pepperoncini. It looks like you spent a lot of time preparing it, but it's made up of mostly, if not all, pre-packaged, jarred, or canned items and the homemade Balsamic Vinaigrette is so easy, you don't even need measuring cups or spoons and it is so good! Give it a try this week and you'll be adding it into your meal planning for sure!

This easy but stunning salad features half moons of maple-Dijon roasted delicata squash, sweet-tart pomegranate seeds, toasted nuts, creamy goat cheese and bitter greens. A quick maple balsamic dressing ties it all together. It’s the perfect mix of flavors and textures and makes for a gorgeous first course to a holiday meal, or a satisfying main course when paired with a rotisserie chicken. If you can’t find delicata squash, swap it out for cubed butternut squash. Also, feel free to use shaved Parmigiano or Pecorino in place of the goat cheese (or leave it out altogether!). Dried cranberries or cherries are a good alternative to the pomegranate seeds.
