Strawberry Curd Mousse Parfaits

If you love strawberries, and it is, after all, strawberry season, this dessert might be just your ticket! This beautiful parfait is made with alternating layers of strawberry curd mousse, strawberry curd, and fresh pureed strawberries. It's light and fluffy and makes a dreamy dessert. Garnish it with fresh strawberries for extra flavor. Once you make it, it keeps well in the refrigerator for a day or two, so you can make it ahead of time if you're in a time crunch. Be sure to cover the parfaits with plastic wrap before refrigerating them. Put the final touch of whipped cream and strawberry garnish on at the last minute. Egg White AlternativesUsually, mousse calls for beaten egg whites, which when folded together with whipped cream create the perfect, fluffy texture. But, if you are a bit nervous about eating raw egg whites like we are, don't worry ... you have several options. Since we are not huge fans of using raw egg whites, we use meringue powder or egg white powder instead. If you mix the powder with water and sugar, they whip up to stiff peaks beautifully and you don’t have to worry about the possible effects of eating raw egg whites. This meringue is perfect for your mousse. You could also use liquid egg whites, but they seem to have a tough time holding onto their stiff peaks, which is why we opt for meringue powder. Or, you can pasteurize the raw egg whites, for peace of mind, And, finally, you can simply use this strawberry curd folded into whipped cream and forget about the eggs all together! Any way you stack it, strawberry mousse layered with strawberry curd and puréed strawberries is going to taste really, really divine!Strawberry Curd Note* This recipe makes enough for both the mousse and to have enough to layer by itself in the parfaits.(Yields about 1 1/2 cups)

If you have a pair of snapclips and some variety of ribbons then you are good to make these. WHAT DO YOU NEED TO MAKE THESE HAIRCLIPS? Snapclips : New or even used ones works fine , black , colored , just plain metal ones. Ribbon : To cover the snapclips, use any type i used 3/8 inch width ribbon. Simmer fabric or ribbon : I used 4 inch width ribbon to cut my eggs, bunny. Any color works here. Stay close to easter theme. Orange ribbon : to trace carrots i used 3/8 inch width polka dot gross grain ribbon. Green ribbon/fabric : Use green ribbon for carrot leaves Lace or Ribbon : These are to decorate the easter eggs, Cut lace to desired width. I used scalloped ribbon slited in center. Can you regular 1/8 inch ribbon too. Emblishments : Use tiny stones , pearls any thing to decorate. Glue gun : To stick everything in place. Scissors : To cut egg, bunny template, as well ribbons. Candle/Lighter : To seal ends of cut ribbon. Paper/cardboard : To draw an egg, bunny shape. HOW TO COVER SNAP CLIPS WITH RIBBON? To cover snapclips (regular size) you need exactly 18 – 20 cms of 3/8 inch ribbon. If you are beginner crafter start with a few more cms than exact length. A coulpe of more twists and you might need extra. you can always trim the extra ribbon than adding more. Step 1: Open your snapclip, starting at the bottom center place your ribbon at 45 degree angle and stick it with a glue dot. Wrap around the outer edge of the snapclip till the top end. Don’t overlap the ribbon much. 3-4 wraps should bring you to the other other end. Step 2 : Add a dab of glue to the tip of the clip and wrap around it. Press for 2 seconds letting the ribbon to stick. Now bring from behind wrap around the other outer edge till the bottom of the clip. you should reach the other end by 3 -4 wraps depending on the angle you warp at.
