Crispy Chicken Sandwich

Crispy Chicken Sandwich

This crispy chicken sandwich is my go-to recipe every time I’m craving a chicken sandwich. The chicken cutlet is slightly spicy, juicy on the inside, and crispy on the outside. the chicken burger is then served with creamy mango sauce, gourmet sesame bun, and red cabbage coleslaw. To make the spicy crispy fried chicken first you need to brine the boneless chicken breast or thighs with hot sauce and spices and let it chill in a fridge overnight. The next morning grab your chicken and dredge it in a dry batter, then dip it in ice-cold water. Repeat the process once more and set aside for 5 minutes then fry the chicken until golden brown. Crispy Chicken Sandwich Ingredients 2 chicken thighs 1 egg white 1 tsp garlic powder hot sauce Salt & black pepper Dredge 1 cup all-purpose flour 1 tsp salt 1/2 tbsp garlic powder 1/2 tbsp smoked paprika 1/2 tbsp black pepper Creamy mango sauce 1/2 cup plain Greek yogurt 1/4 cup mayonnaise 1 mango, roughly chopped 1 red chili Juice of 1 lime Salt and pepper to taste Coleslaw 1 cup shredded red cabbage 1 carrot, peeled and sliced chopped cilantro, optional 1 tbsp apple cider …

Potato Pierogies

Potato Pierogies

1. Combine flour, salt sour cream, egg and water in a mixer bowl. Mix with dough hook until dough comes together. If dough is dry, add more water 1 tablespoon at a time, until it's moist and springy. If the dough is sticky, add more flour, 1 tablespoon at a time, until it's smooth.2. On a floured work surface, knead dough for 3 or 4 minutes until elastic. Separate dough into 4 balls. Cover dough with plastic wrap and refrigerate for at least 30 minutes.3. In the meantime work on the filling: Boil potatoes with 1/2 tsp salt for 15 minutes or until just tender. Drain for 2 minutes.4. In a separate pan cook the butter and onion and over low heat with a dash of salt until well browned. About 10 minutes.5.Put the well drained potatoes into the pot they were cooked in and add the buttery onions, a dash of salt and white pepper. Mash with a potato masher. Add the sour cream and whip together.6. Taste and season if needed add a slash of milk or cream if too dry. Cover and store in the fridge until later use.7. Roll dough to an 1/8 inch thickness and cut with a biscuit cutter. Repeat with the 3 remaining balls of dough. Mash together all the scraps and roll out. You will have about 45-50 dough rounds. Cover with a lightly damp towel.8. Working 5 at a time, brush each round with eggwash. Then fill with about 1 TBSP of filling. Press each closed to make a half moon shape. Repeat with all the dough rounds.9. Bring a large pot of salted water to a boil. Boil 5 pierogies at a time. Drop in water and wait until they float. Lift out with a slotted spoon and let drain on paper towels.10. Once they have dried a bit it's time to fry them. In a non-stick skillet melt the bacon fat or butter and brown the pierogies. Season with salt & pepper.11. Serve with sour cream, sauteed onions, chopped green onions or your favorite pork item (like bacon, smoked sausage or pork belly etc)

Easy Buckwheat Crepes (Gluten Free)

Easy Buckwheat Crepes (Gluten Free)

This foolproof buckwheat crepes recipe results in perfectly tender crepes with crispy edges. Made with just buckwheat flour, the whole grain crepes are naturally gluten free and have a robust nutty flavor. I love to serve them with good quality sliced ham, cheese (go for gruyere, Comté or cheddar), apples and grainy mustard (see the Recipe Tips below!). They’re also awesome with fried eggs, or you can stuff them with your favorite veggies, such as Ratatouille and goat cheese, sautéed spinach and mushrooms, or creamy leeks and peas—the sky’s the limit! For a sweet version, try topping the crepes with sautéed pears or roasted berries, along with melted chocolate and whipped cream. Check out the French Crepes video above to see how to swirl the batter into the pan!

Crustless Zucchini Pie

Crustless Zucchini Pie

This crustless zucchini pie is the perfect lunch for a sunny day in the garden. The recipe originally comes from a friend in Crete. It’s both easy, and a great way to use up the glut of courgettes we seem to enjoy every July and August! Accompanied by a side salad (and maybe a chilled glass of white wine!), this courgette tart is so savoury and satisfying. The feta, parmesan and eggs give it that cheesey, almost quiche-like consistency, whilst the grated courgette/zucchini and the fresh herbs give it a real green vibrancy and fresh taste. Since it’s without a crust, it’s a really healthy, light option too. I’ve even been known to wrap the whole thing in tin foil and take it to the park for a picnic - and you can be sure that none ever comes back!

Snapclips : New or even used ones works fine , black , colored , just plain metal ones. Ribbon : To cover the snapclips, use any type i used 3/8 inch width ribbon. Simmer fabric or ribbon : I used 4 inch width ribbon to cut my eggs, bunny. Any color works here. Stay close to easter theme. Orange ribbon : to trace carrots i used 3/8 inch width polka dot gross grain ribbon. Green ribbon/fabric : Use green ribbon for carrot leaves Lace or Ribbon : These are to decorate the easter eggs, Cut lace to desired width. I used scalloped ribbon slited in center. To cover snapclips (regular size) you need exactly 18 – 20 cms of 3/8 inch ribbon. If you are beginner crafter start with a few more cms than exact length. A coulpe of more twists and you might need extra. you can always trim the extra ribbon than adding more. Step 1: Open your snapclip, starting at the bottom center place your ribbon at 45 degree angle and stick it with a glue dot. Wrap around the outer edge of the snapclip till the top end. Don’t overlap the ribbon much. 3-4 wraps should bring you to the other other end. Step 2 : Add a dab of glue to the tip of the clip and wrap around it. Press for 2 seconds letting the ribbon to stick. Now bring from behind wrap around the other outer edge till the bottom of the clip. you should reach the other end by 3 -4 wraps depending on the angle you warp at. Step 3 : Wrap till the other end and with a dab of glue secure the ribbon front and behind and trim any excess.   watch EASTER HAIRCLIPS VIDEO HERE

Carrot Cake with Yogurt Cream

Carrot Cake with Yogurt Cream

What’s a Greek carrot cake, I hear you ask? Well, for me, all things Greek use Greek yoghurt wherever possible! So yes, this is a carrot cake without cream cheese -I substitute in that tart, rich tang of Greek yoghurt instead, to make for a slightly healthy carrot cake, as well as a yummy one. That tart, sweet tang is literally ‘the icing on the cake’ when it comes to carrot cake - that vegetable, spiced moist batter is just complemented so perfectly by a tangy sweet frosting. Carrot cake might just be my favourite cake - and that’s saying something! Being wholemeal flour, as well as containing carrots, raisins, and walnuts as well as eggs and plenty of spices, I can convince myself that this indulgent treat is at least doing me a little bit more good than a decadent fudge cake, for example. Yoghurt icing for carrot cake isn’t completely pioneering - it really does mimic that slightly sour-sweet tang that cream cheese frosting delivers, but with the added goodness of Greek yoghurt. A creamy Greek yoghurt frosting is just as easy to make as a cream cheese one, and we are always more likely to have Greek yoghurt in the fridge - so it just makes this cake a real easy store cupboard bake for our household.
