Whenever we go out for Thai food my husband orders chicken massaman, a rich coconut-based curry with meat, potatoes and peanuts. This lighter vegetable-packed curry takes inspiration from that dish, using peanut butter and coconut milk to thicken the sauce. It’s now one of James’s favorite weeknight meals—and mine too. Cauliflower and red potatoes give the curry heft, while frozen green beans, which are added at the end, impart brightness and color (you can use 3 cups of baby spinach in place of the green beans, if you prefer). Roasted peanuts also go right into the curry, providing texture (be sure to buy unsalted nuts). The aromatics need a quick stint on the stovetop before going into the slow cooker, but you can microwave them instead (instructions included!).

Torch Ginger, Kecombrang, Honje, Wild Ginger, Bunga Kantan, Wild Ginger…whatever the name, this exotic flower is another valuable ingredient in Indonesian kitchen. The long stemmed bud of torch ginger flower looks like a spear with sweet floral fragrance & a hint of ginger aroma. You can use the buds for zest up curries (Gule Kuta-Kuta or Karonese Chicken Curry) or stews ( Arsik Ikan or Stewed Spiced Fish from North Sumatra). Sliced or shredded the buds and add it to salad ( Seasonal Market Vegetables with Peanut Sauce), or make Balinese Sambal Matah. Torch Ginger Fried Rice   Ingredients 400 gr leftover rice 2 medium shallots, thinly sliced 1/2 Tsp shrimp paste, lightly crushed 1 green onion, thinly sliced 2 torch ginger, finely sliced 2 kaffir lime leaves, centre spine removed, finely sliced 1 tbsp vegetable oil Salt 2 eggs Direction Heat a wok over medium-high heat, swirling about 2 tablespoons oil to a pan.  Sauteed shallots and shrimp paste for about 2 minutes, until fragrant. Turn heat to medium-low, add chopped chillies, kaffir lime leaves and torch ginger. Add rice, salt and pepper, stir until combined. Add chopped scallion, give it a quick mix and remove from heat. Easy Slow Cooker Dal

You’re going to love this easy, creamy slow cooker dal, which is a cinch to make using inexpensive pantry ingredients! It’s rich and nourishing yet bright and healthy. Serve the dal as a side dish, or turn it into a full meal by pairing it with rice and/or naan bread and sautéed vegetables (we especially love this with garlicky sautéed greens, such as kale, spinach or Swiss chard). If you’d like, you can also serve shredded rotisserie chicken alongside. I prefer to use light coconut milk in this recipe, as it gives the dal a silkier texture (you can use full-fat but it will be a bit thicker). If you want to skip the stovetop prep you can simply cook the aromatics in the microwave (I've included instructions below!). Be sure to cook the dal on low heat, not high (see the Notes below).
