Mediterranean Salmon and Cauliflower Rice Bowl - Dreamy Table

This salmon and cauliflower rice bowl inspired by machboos. In Bahrain machboos commonly regarded as a national dish, but this dish can be also found served in other Persian Gulf countries such as Kuwait and Qatar. The dish is usually made with pulao (pilaf/rice) and either chicken, meat or even fish. But this time I replaced the white rice with cauliflower rice and served it with grilled salmon and tabbouleh salad.  Well I know multitasking isn’t good, but on a busy day I often had lunch on my desk and doing some other works at the same time. This salmon and cauliflower rice are one of my favourite lunch when I’m a busy or just lazy to use proper cutlery. To cut the cooking time, I usually prepared the cauliflower ahead and keep it in the fridge. Just keep the grated cauliflower in a clean container and it will be last up 5 to 7 days. I've always been a fan of Yoshinoya's beef bowl. To be honest, I prefer the ones they serve in Japan. For those who does not know what is Yoshinoya, it is a fast-serving Japanese Beef Bowl restaurant found wildly in Japan and the restaurant franchise has gone internationally in Southeast Asia. But instead of beef, I'm going to share another version using pork. Buta Don is a Japanese dish consisting of a bowl of rice topped with pork simmered in a mildly sweet sauce. It also often includes onions and a sprinkling of green peas. Buta means "pig" or "pork", and don is short for donburi, the Japanese word for "bowl". The original version uses sliced fatty pork but I'm using pork collar used for shabu shabu.

This grilled panzanella salad incorporates a bounty of summer vegetables into one of the BEST SALADS EVER. With creamy mozzarella, grilled bread and a garlicky red wine vinaigrette, it’s a healthy meal or side dish that’s packed with flavor and texture. Feel free to use other vegetables according to what you have or like (such as eggplant, mushrooms, corn or asparagus). Also, you can swap out the mozzarella for other sources of protein, such as grilled chicken, canned white beans, feta cheese or good quality jarred tuna. I often add grated parmesan as well (simply because I love it). The anchovy in the dressing adds depth and complexity to the vinaigrette, but you won’t taste it. However, you can omit it for a vegetarian version.
