This has got to be my all-time favorite salad, and I hope you’ll love it too. Halloumi, which is a firm, springy and salty cheese with a high melting point, gets seared in a skillet until crisp on the outside and warm within. It’s completely addicting, especially when combined with peppery arugula, quinoa, caramelized summer squash, fresh mint and pomegranate seeds. A Green Tahini Dressing is the magic elixir that ties it all together. You’ll need to make the dressing first, but it can be made up to 2 weeks ahead. I love topping this salad with sweet-and-salty Maple Pecans, although you can go for any roasted chopped nuts. If you prefer, you can grill the halloumi instead of pan-frying it (see the Tips below). Also, feel free to use leftover cooked quinoa—you’ll need 2 cups.

This grilled panzanella salad incorporates a bounty of summer vegetables into one of the BEST SALADS EVER. With creamy mozzarella, grilled bread and a garlicky red wine vinaigrette, it’s a healthy meal or side dish that’s packed with flavor and texture. Feel free to use other vegetables according to what you have or like (such as eggplant, mushrooms, corn or asparagus). Also, you can swap out the mozzarella for other sources of protein, such as grilled chicken, canned white beans, feta cheese or good quality jarred tuna. I often add grated parmesan as well (simply because I love it). The anchovy in the dressing adds depth and complexity to the vinaigrette, but you won’t taste it. However, you can omit it for a vegetarian version.

Maple-Roasted Delicata Squash Salad with Goat Cheese & Pomegranate Seeds

This easy but stunning salad features half moons of maple-Dijon roasted delicata squash, sweet-tart pomegranate seeds, toasted nuts, creamy goat cheese and bitter greens. A quick maple balsamic dressing ties it all together. It’s the perfect mix of flavors and textures and makes for a gorgeous first course to a holiday meal, or a satisfying main course when paired with a rotisserie chicken. If you can’t find delicata squash, swap it out for cubed butternut squash. Also, feel free to use shaved Parmigiano or Pecorino in place of the goat cheese (or leave it out altogether!). Dried cranberries or cherries are a good alternative to the pomegranate seeds.
