Tropical Coconut Shrimp & Ahi Salad

This salad is big enough for the main course, yet light for a warm summer evening. I love the sweet Thai chili sauce vinaigrette because it complements the fruit and coconut on the shrimp, but you could easily serve this salad with a teriyaki sesame dressing if you prefer a more savory taste. I’ve accounted for about 1/8 pound of ahi and 1/4 pound of shrimp per person. You can adjust as you like!

That's why I LOVE this book : Quick & Easy Thai by Nancie McDermott, (Chronicle Books, 2004). Nancie was kind enough to let me re-print one of my favorite recipes, which is a perfect mixture of the tastes I'm drawn to over and over again; tropical fruit, searing chilis, seafood, and Thai spices. I photographed some of the steps along with my final version of the dish to illustrate the process. Luckily the recipe was truly quick and easy because I wasn't about to wait. I inhaled this entire dish immediately after taking these photos.

Tuna sambal kecombrang (tuna with torch ginger sambal). You can serve this mostly raw sambal with rice or serve it with salad. To make it, cut the blue steak tuna with a sharp knife into small cubes. Mix the tuna with thinly sliced shallots, garlic, torch ginger, kaffir lime leaves, bird’s eye chili, salt, a dash of sugar & Thai fish sauce. Then carefully pour very hot coconut oil over the tuna. I’ve always thought every Singaporean loves Fruit Rojak but I was wrong. My brother is one of those non-Rojak lovers.
