Mediterranean Farro Bowl

Bowls can be made in the style of many different types of cuisine from Thai or Indian to Mexican, Chinese, Greek, French, Italian and Mediterranean! And, the great thing is that you can add whatever you like. Have it your way! Several years ago we featured our Forbidden Black Rice-Tabouli Chicken Bowl and that one is still one of our family’s favorites. Farro is an ancient grain that is packed with nutrients! To me, it's kind of a cross between barley and wheat berries, but it's got a bitey, sort of chewy texture and it complements so many different flavors. It's delicious served hot or cold, and this recipe could be served either way, too. For lunch, we usually have it at room temp, but for dinner, we often serve it hot, to allow the cheese to melt. For this recipe, I used Trader Joe’s 10-Minute Farro, which literally cooks in 10 minutes, but use any farro you like (most take longer to cook than the TJ's brand) and add whatever ingredients you feel like adding or subtracting. Yesterday I made this creamy Indian butter chicken pasta for dinner, it cosy, warming and so delicious.  Creamy Indian Butter Chicken Pasta This creamy Indian butter chicken pasta is adapted from classic Indian dish. Usually, butter chicken is served with basmati rice, naan, or paratha but this time I served it with pasta. Ingredients Chicken Marinade 250 gr boneless and skinless chicken thighs or breast 1/3 cup greek yoghurt 1 teaspoon ground coriander 1/2 teaspoon Kashmiri or red chilli powder 1 teaspoon garam masala 1/4 teaspoon turmeric powder 1 teaspoon garlic paste 1/2 teaspoon ginger paste a pinch of salt Butter Chicken Fettucine 400g dried fettuccine, cook according to package instruction 1 small onion, chopped 1 teaspoon garlic paste 1/2 teaspoon ginger paste 2-inch cinnamon 2 green cardamom 200 gr tomato puree 1 teaspoon Kashmiri chilli powder 100 ml cream 1 tablespoon butter 1 tablespoon vegetable oil Cooking direction whisk all the ingredients for marinade in a large bowl. Put the chicken in and coat with the marinade. Cover and refrigerate for at least 3 hours, or up to a day. Preheat the oven to 24o C. Grill the chicken in the oven for about 20 to 30 minutes until …

1. Cook the diced bacon in a dutch oven over medium heat until brown and crispy, about 6 to 7 minutes. Drain bacon on paper towels and set aside.2. Add the onions to the bacon fat in the dutch oven and reduce heat to medium-low. Cook onions until well browned, about 20 minutes, stirring occasionally. Place cooked onions on a plate and set aside. Rinse and dry dutch oven.3. Simmer the chicken broth in a saucepan and keep hot on the stove over low heat.4. Heat the oil in the now empty dutch oven over medium heat. Add the garlic and cook until fragrant, about 30 seconds. Add the rice, cook and stir for 2 minutes.5. Add 1 cup of the hot chicken broth to the rice and continue stirring until the rice has absorbed the liquid. Continue adding broth 1 to 2 cups at a time while continuously stirring, until rice has absorbed the liquid and mixture is creamy, about 25 to 30 minutes.6. Turn off the heat and stir in the onions, bacon, Parmesan cheese and thyme. 7. Add salt and pepper to taste. Serve.
